Keto Cauliflower Fried Rice

This recipe was adapted from one of my favorite cookbooks, Simply Keto by Suzanne Ryan. It’s so incredibly simple to make and has become a staple in my Sunday Meal Prep Sessions.

As a busy mom I’m all about the easier, the better when it comes to cooking. But at the same time I stay away from as much processed food as possible. Can we please just talk about how amazing frozen riced cauliflower is though for a minute?! Seriously, this is a game changer. Thank you so much Green Giant! Keto life is so much simpler now because of you.

To keep this recipe as clean, organic and keto friendly as I can I am adding brands I use. Feel free to use what you have on hand.

INGREDIENTS:

1 bag frozen Green Giant Cauliflower Rice

3 Tablespoons Coconut Aminos (soy alternative)

3 Tablespoons Kerrygold Butter (Costco has the best price on this brand!)

3 Organic, Pasture Raised Eggs

1 Clove Garlic (or 1/2 tsp minced)

Green Onion (optional)

Sesame Seeds (optional)

DIRECTIONS:

Cook frozen cauliflower rice in the microwave or on the stovetop per the directions on the bag.

Melt 2 tbsp butter in skillet. Add garlic and saute for 1 minute.

Add cauliflower rice to garlic and butter. Mix well.

In a separate skillet, melt remaining 1 tbsp butter and scramble 3 eggs.

Add scrambled eggs and Coconut Aminos to cauliflower rice.

Combine and heat on low to medium heat for about 5 minutes until well combined.

Top with green onion and sesame seeds if you’d like. You can see from the image that I didn’t ;)

There ya go! I love making this ahead of time. It heats up well and goes great with almost any protein and veggie :)
